Fire Roasted Pizzas Four Ways

Pizza Dough Ingredients:
• 1/2 tsp active dry yeast
• 1/3 tsp quick rise yeast
• 2 tsp salt
• 1 1/2 cups warm water
• 4 cups flour

Step 1: Make the pizza dough
Combine all of the ingredients into a bowl and mix well. Knead the dough for 10 minutes. Cover the dough with a towel and let it rise for 1-2 hours.

Step 2: Mexican Street Corn Pizza
Prepare the ingredients for the Mexican street corn inspired pizza.
Cut the kernels off of two ears of sweet corn. Finely dice some white onion.

Peruvian Sauce:
• 15 mint leaves
• 1 cup of cilantro
• 5 cloves of garlic
• 1 Tbsp salt
• 5 oz Cotija cheese
• 1 poblano pepper
• 1 jalapeño pepper
• 1/2 cup mayo
• 1 Tbsp hot yellow pepper paste
• 1 squeezed lime
• 1/2 cup water

Step 3: Peruvian Sauce
Remove the seeds and stems from the peppers. Add all the ingredients into a food processor and blend until smooth.

Pizza Sauce ingredients:
• 1 Tbsp olive oil
• 5 cloves of garlic
• 3 whole tomatoes
• 1/4 cup chopped basil
• 1/4 cup oregano
• 1/8 teaspoon salt
• 1/8 teaspoon pepper
• 1/2 cup tomato paste
• 1 tsp sugar
• 1/2 cup water

Step 4: Pizza sauce
Coat a sauce pan with olive oil and set to medium heat. Put all of the ingredients in the pan. Once the tomatoes are soft, smash them and mix to incorporate all of the ingredients.

Step 5: Roll out the pizzas
Split the dough into desired pizza portions. Form the cut pieces back into balls and then roll them out. Cornmeal helps to prevent the dough from sticking to surfaces.

Step 6: Assemble Pizzas
Assemble all of the pizzas with desired ingredients.

Step 7: Cook the Pizzas
Bake your pizzas until the crust is crispy and the cheese is fully melted and bubbly.

Step 8: Fresh Toppings
Add any additional fresh toppings and sauces to your pizzas, cut into slices, serve, and enjoy!
